Butter Beans and Sausage      Back to Vegetable Dishes     Printer Friendly Page

Serves 6

1 pound Large Lima Beans
1 pound sausage
1/2 cup onion -- chopped
2 tablespoons olive oil
2 teaspoons cajun seasoning
1 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon black pepper
1/2 cup butter(1 stick)
6 cups water

In your favorite bean pot brown the onions and sausage in the 2 tablespoons of olive oil. When the sausage and onions are browned add 6 cups of water. Now add one pound of large Lima beans. Add all the spices and the butter and mix well. Bring the pot to a boil and then reduce heat to medium. Add water as needed to prevent burning. Continue to cook until beans are tender. Serve with homemade cornbread.
