Serves 4
12 chicken tenderloins or 4 breasts
1/4 cup olive oil
2 tablespoons butter
1/2 cup onions -- chopped
1/2 cup red or green bell pepper -- chopped
2 cloves of garlic -- chopped
Sauce
1 tablespoon vinegar
2 tablespoons Worcestershire sauce
3/4 cup barbecue sauce
1/2 cup ketchup
1 tablespoon mustard
1 tablespoon lemon juice
3/4 cup water
salt and pepper -- to taste
In a hot skillet add 1/4 cup olive oil and 2 tablespoons of butter. Add onions and sauté until slightly browned. Add the bell pepper and garlic. Add chicken and cook 5 minutes on each side. Combine all ingredients for the sauce. Put chicken in a casserole dish (13 X 9) and cover with the prepared barbecue sauce. Cook covered in a 375 degree oven for 45 minutes.
