Makes 5 to 6 Dozen
2 sticks butter -- softened (1 cup)
3/4 cup sugar
3/4 cup brown sugar -- packed
2 eggs
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla
2 1/4 cups flour
1 cup Toffee pieces
1 cup pecans -- chopped
Cream butter, sugar, and eggs. Add baking soda, salt, and vanilla. Mix well. Add flour and mix just until flour is blended. Do not over mix. Stir in Toffee pieces and pecans. Use a spoon or ice cream scoop to drop dough on cookie sheet (lined with baking paper if available). Bake at 350 degrees for 9 to 11 minutes or until golden brown. Remove from oven cool a few minutes then remove from cookie sheet and put on cooling racks to cool completely.
