Makes 2 loaves

2 1/2 cups sugar
1/2 cup butter (1 stick)-- softened
4 eggs
2 teaspoons baking soda
1 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon salt
2 cups sweet potatoes -- (cooked and mashed)
4 cups flour
1 can evaporated milk -- (about 1 cup)
1 tablespoon vanilla

Cream butter, sugar, and eggs. Add sweet potatoes and all dry ingredients except the flour. Mix until well blended. Add flour, milk, and vanilla and mix until smooth. Pour batter into 2 loaf pans that have been sprayed with cooking spray or lined with baking paper(preferred method). Bake in a 350 degree oven until centers test done. Remove from oven and let cool for a few minutes, then remove from pans and place on cooling racks to cool.
