Serves 4

4 eggs -- beaten
1/3 cup cooked sausage -- chopped
1/2 cup hashed brown potatoes -- uncooked
1/2 cup grated cheddar cheese
1/2 teaspoon cumin
1 tablespoon parsley
salt and pepper -- to taste
2 tablespoons chopped onions -- if desired
1/4 cup green bell pepper -- chopped
4 tablespoons butter

Add the butter to a hot small skillet. Add the onions and bell pepper and saute until tender. Set aside. Combine the beaten eggs, sausage, cheese, and all of the seasonings. Add the cooked onions and bell pepper. Mix well and put into a small casserole dish, that has been sprayed with cooking spray. Bake in a 375 degree oven for about 30 minutes. Serve with biscuits and gravy or buttered toast and jelly.
