1/2 cup butter (1 stick)-- softened
1 1/2 cups sugar
2 eggs
1/4 cup vegetable oil or olive oil
1 teaspoon salt
2 teaspoons vanilla
1/2 teaspoon red food coloring
1/4 cup cocoa
1 cup buttermilk
2 cups flour
1 teaspoon vinegar
1 1/2 teaspoons baking soda

Cream butter, sugar, and eggs. Add the salt, cocoa, vanilla, and food coloring. Mix well. Add flour and buttermilk and mix until batter is smooth. In a small container combine the vinegar and baking soda, then add to batter and stir in by hand. Pour batter into a 13" X 9" 1/4 sheet cake pan or 2 9" round pans that have been sprayed with cooking spray. Bake in a 350 degree oven, about 25 to 30 minutes, or until cake tests done. Turn out on cooling racks to cool completely. When cool frost with a cream cheese frosting.
