Makes 2 crusts    Flaky Pie Crust (made with butter)

2 cups flour
3/4 teaspoon salt
1 tablespoon sugar
2/3 cup shortening
1 tablespoon lemon juice
1/4 cup ice water

Mix flour, sugar, and salt. Cut in shortening until the mixture resembles coarse meal. Add the lemon juice and half of the water. Mix and add water as needed until dough comes together in a ball. Wrap dough with plastic wrap and place in refrigerator and chill for about 2 hours.
