Blush Wine Jelly

Recipe By Jackie Metzger-Queen Ann Bed and Breakfast, Galveston Texas
Preparation Time 0:10

Makes 2 pints

2 cups White Zinfandel Wine
3 cups sugar
1 pouch (3oz) Certo Liquid Fruit Pectin -- do not use powder

In a saucepan combine the wine and sugar. Over medium heat, bring the mixture to a simmer. Do not boil. Remove from the heat and stir in the pectin. Pour into containers and store in refrigerator.

Note: Substitute Raspberry or Strawberry Zinfandel for a little variation.

Ron and Jackie Metzger own and operate a wonderful bed and breakfast near the Strand in downtown Galveston, Texas. On a recent visit we had the pleasure of having breakfast with Ron and Jackie and the rest of the guests. Jackie served a fabulous breakfast and one of the highlights was the homemade Blush Wine Jelly. I persuaded Jackie to share the recipe with me. It is so easy to make and is just wonderful on fresh hot biscuits or toast.
