Orville's TexMex Casserole

Serves 6

2 tablespoons olive oil
2 tablespoons butter
1 pound ground pork or ground beef
3/4 cup red onion -- chopped
1/2 cup green bell pepper -- chopped
1 tablespoon minced garlic
1 can rotel tomatoes
1 can tomato sauce -- 15 oz
1 can green chiles -- chopped
1 can cream style corn
1 tablespoon cumin
1 teaspoon chili powder
1 teaspoon basil
salt and pepper -- to taste
12 corn tortillas -- cut in small pieces
1 pound monterey jack cheese -- grated

Add the olive oil and butter to a hot skillet. Add the onion and start browning. Add the ground meat, garlic, bell peppers and all of the seasonings. Cook until meat is well browned. Add the rotel tomatoes and green chiles. Cook for about 8 minutes. In a large mixing bowl combine the cooked meat and vegetables with the tomato sauce, cream style corn, and the cut up tortillas. Add 3/4 of the cheese and mix well. Now prepare a casserole dish by spraying with cooking spray. Put the mixture in the casserole dish and top with the remaining cheese. Cover casserole dish with a lid or foil and place in a 375 degree oven and bake for 35 minutes. Remove cover and bake for another 10 minutes to brown the cheese on top.
