Sausage and Rice Casserole

Serves 8

Roux

1/2 cup olive oil
1/2 cup flour

Rice

2 cups Rice (uncooked)
4 cups Water
2 teaspoons salt
4 tablespoons butter

1 pound sausage
2 tablespoons olive oil
1/2 cup onions -- chopped
3/4 cup bell pepper (chopped)
1 teaspoon cajun seasoning
1 teaspoon basil
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon pepper
5 tablespoons butter (melted)
1/2 cup sour cream
3 cups grated cheddar cheese
1 1/4 cups milk

Cook the rice. Add 1/2 cup of olive oil to a hot skillet. Stir in 1/2 cup of flour. Cook over medium high heat, stirring constantly, until the flour starts to brown. Cook until it has a nice carmel color, then set aside. Add 2 tablespoons of olive oil to a skillet. Add the sausage, onions, and bell pepper and cook until the sausage is browned. In a large mixing bowl add the cooked rice, the browned sausage, all of the spices, 3 cups grated cheese, sour cream, melted butter, and milk. Mix until well blended. Place in a large casserole dish and cover with a lid or foil. Cook in a 400 degree oven for about 45 minutes.

Rice cooking instructions

In a heavy sauce pan or pot add 2 cup of rice and 4 cups of water. Add 2 teaspoon of salt, and 4 tablespoons of butter. Bring to a boil, cover with a lid, and reduce heat to low. Cook for 20 minutes. Do not remove the lid until the rice has cooked for the full 20 minutes.
