Salmon Croquette Patties

Makes 2 patties

1 can white salmon -- 6 ounce can
1 egg
3/4 cup saltine crackers -- crushed
2 tablespoons onion (if desired) -- chopped
salt and pepper -- to taste

In a mixing bowl add the egg to the salmon and mix. Add salt and pepper. Crush saltine crackers using a rolling pin. Crush enough for 1 1/4 cups of cracker crumbs. Add 3/4 cup of the crushed crackers and the onions, if desired, to the salmon and mix well. Make 2 patties from the mixture. Use the remaining 1/2 cup of cracker crumbs to coat the outside of the patties. Coat the bottom of a skillet with olive oil, about 1/2 to 2/3 cup depending on pan used. When the oil is hot place the patties in the pan and cook for about 5 minutes on each side or until brown.
