S.E. Texas "Red Beans"

Serve over rice or for a real spicey treat serve over spanish rice.
Add some cornbread for a complete meal.

1 1/2 cups dried pinto beans
1/2 pound smoked sausage -- cut in small cubes
1/2 cup red onion -- chopped
1/2 cup red bell pepper -- chopped
1/2 cup green bell pepper -- chopped
1/2 cup fresh tomatoes -- chopped
1 teaspoon cajun seasoning
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/2 teaspoon basil
salt and pepper -- to taste

In your favorite bean pot add the pinto beans and cover with water. Add the onions, peppers, and tomatoes. Add all the spices. Cut the smoked sausage into small cubes. Bring beans to a boil and then reduce heat to low. Cook for about 1 hour and then add the sausage. Add water as needed. Continue to cook until beans are tender.
