Orville's Meatloaf

Serves 6

2 pounds ground pork or beef
2 eggs
1/2 cup oatmeal
1 1/2 cups saltine crackers -- crushed
2 tablespoons olive oil
1/2 cup onion -- chopped
1 tablespoon minced garlic
1/2 cup green bell pepper -- chopped
1/2 cup fresh tomatoes -- chopped
4 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon basil
1 teaspoon salt
1/2 teaspoon pepper

In a large bowl mix the meat, eggs, oatmeal, crackers, tomato paste, salt, and pepper. In a hot skillet add 2 tablespoons of olive oil, onions, bell pepper, tomatoes, garlic, Worcestershire sauce, and basil. Cook the vegetables until tender. Add the vegetables to the meat mixture. I form my loaf on a piece of aluminum foil. Set the meatloaf on a small rack in a large casserole dish and cover with foil. By setting on a rack it allows any grease from the meat to drain into the casserole dish. Cook covered for about 1 hour in a 400 degree oven. Remove the foil from the top and bake for another 15 minutes. Remove from oven and slice.
