Hawaiian Chicken

Serves 4

8 to 10 chicken tenderloin strips
2 tablespoons olive oil
3 tablespoons butter
1/2 cup onion -- chopped
1/2 cup red bell pepper -- chopped
1/2 cup apple -- chopped
1/2 cup crushed pineapple -- (1 small can)
1/2 teaspoon tarragon
1/4 teaspoon dill weed
1/4 cup water
4 tablespoons brown sugar
1 tablespoon molasses
salt and pepper -- to taste

In a hot skillet add 2 tablespoons olive oil and 3 tablespoons of butter. Place the chicken strips in the skillet. Add the onions and brown the chicken on one side. Turn chicken strips over and add the bell pepper, apple, pineapple, and seasonings. Mix 4 tablespoons of brown sugar and 1 tablespoon of molasses in 1/4 cup of water. Pour this mixture over the chicken. Cover and cook for about 15 minutes. Remove lid and cook for another 15 minutes to reduce the liquid. Serve over rice.
