Cajun "Dirty Rice"

Serves 4 to 6

1 cup rice -- uncooked
2 1/2 cups chicken stock -- or chicken broth
1/2 stick butter
1/2 pound ground pork
1/2 pound sausage
3/4 cup red onion -- finely chopped
1/2 cup red bell pepper -- chopped
1/4 cup celery -- chopped
1 tablespoon minced garlic
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper -- more if desired
salt -- to taste

In a sauce pan add 2 cups of chicken broth. Bring to a boil then add the 1 cup of uncooked rice. Cover and reduce heat to low and cook for 20 minutes. Melt the butter in a large skillet and then add the pork and sausage. After the meat starts to brown add the onion, celery, bell pepper, and seasoning. Cook until the vegetables are done. Add the remaining 1/2 cup chicken broth and the cooked rice. Cover and simmer for about 10 minutes or until liquid is absorbed.
