Breakfast Burritos

Makes 4 Burritos

1/4 pound sausage
4 eggs
2 tablespoons milk or heavy cream
1/4 cup onion -- finely chopped
1/8 teaspoon chili powder
1/2 teaspoon cumin
3 tablespoons butter
salt and pepper -- to taste

4 flour tortillas
1 tablespoon butter -- softened
1 cup grated Cheddar or Montrerey Jack cheese

Add 3 tablespoons of butter to a hot skillet. Add the sausage and the onions (if desired) to the skillet. Add the cumin, chili powder, and salt and pepper.Cook until sausage is browned. Beat the four eggs with 2 tablespoons of milk or heavy cream. Add the eggs to the sausage and onions and cook until done, stirring as you cook the eggs. With the 1 tablespoon of softened butter, lightly butter 4 flour tortillas. Place the tortillas on a hot griddle, buttered side down, and heat until they start to brown. Remove from griddle and fill with 1/4 of the egg/sausage mixture and 1/4 of the grated cheese. Roll them up and place in a microwave and heat long enough to melt the cheese or wrap them in foil and place in the oven until cheese is melted. Serve with pecante sauce.
