Spicy Blackeyed Peas with Sausage

Serves 6

2 cups dried blackeyed peas
2 tablespoons olive oil
1 pound sausage
1/2 cup red onion -- chopped
1 clove garlic -- crushed
1/2 cup green bell pepper -- chopped
1 can Rotel Tomatoes
1 tablespoon cumin
1 slice bacon
salt and pepper -- to taste

Wash peas and add to a heavy pot. Cover with water. Bring to a boil over high heat. In a skillet add the olive oil and brown the sausage with the onions, bell pepper, and garlic. When the sausage is browned add it to the bean pot. Add the cumin, salt, pepper, bacon, then add the Rotel Tomatoes. After pot comes to a boil reduce heat to medium and cook until peas are tender (about a hour and a half). Add water as needed to prevent peas from burning.
