Skillet Barbecued
Smoked Sausage

Serves 4

1 pound smoked sausage -- sliced 1/4" thick
2 tablespoons olive oil
2 tablespoons butter
1/2 cup onions -- chopped
1/2 cup red or green bell pepper -- chopped
1/2 cup fresh tomatoes -- chopped
2 tablespoons tarragon vinegar or red wine vinegar
2 tablespoons Worcestershire sauce
1 teaspoon tarragon
1 teaspoon dill weed
1 tablespoon minced garlic
1/2 cup barbecue sauce
salt and pepper -- to taste

In a hot skillet add 2 tablespoons of olive oil and 2 tablespoons of butter. Add onions and saute until slightly browned. Add the bell pepper, garlic, and tomatoes. Add all of the seasonings. Add the smoked sausage, vinegar, Worcestershire sauce, and barbecue sauce. Cook covered on low for about 20 minutes.
