Peach Muffins

Makes about 20 Muffins

1/2 cup butter (1 stick)-- softened
1 1/2 cups sugar
2 eggs
4 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon cinnamon
1 1/2 cups milk
3 1/2 cups flour
2 cups peaches (canned) -- (diced)

Cream butter, sugar, and eggs. In a seperate bowl mix flour, salt, cinnamon, and baking powder. Remove creamed butter, sugar, and eggs from mixer and stir in the milk. Add the flour and mix in by hand just until blended. Stir in the spiced peaches. Spoon about 1/4 cup of the filling into each cup of the muffin pan that has been brushed with melted butter. Top each muffin with 1 tablespoon of the Streusel topping mixture. Bake in a 400 degree oven for 15 to 20 minutes or until golden brown.

Streusel Topping

1/2 cup brown sugar -- packed
1/2 cup flour
1/2 teaspoon cinnamon
4 tablespoons butter -- chilled
1/4 cup pecans -- finely chopped

Streusel Topping: Combine 1/2 cup brown sugar, 1/2 cup flour, 1/2 teaspoon cinnamon, 1/4 cup pecans and 4 tablespoons of chilled butter. Cut the butter in until the mixture resembles coarse meal.
