2 slices bacon -- chopped
1/2 cup onion -- chopped
2 tablespoons olive oil
1 large potato -- thinly sliced
1/2 cup butter
salt -- (to taste)
pepper -- (to taste)

Place olive oil in a large hot skillet. Add the bacon and cook until it starts to crisp. Add the onions and cook until tender. Remove the onions and bacon from skillet. Place the butter in the skillet and heat until melted. Put the sliced potatoes in the skillet and cook until browning begins. Add the bacon and onions back into the skillet. Cook until potatoes are browned. Remove from heat and place in a preheated 400 degree oven and continue to cook for about 10 minutes. Remove and serve when potatoes are completely done.
