Serves 6

12 corn tortillas
enchilada filling    Beef    Pork   Chicken
1 1/2 cups grated Montery Jack Cheese
1 1/2 cups   Chili Con Queso

Prepare the filling and chili con queso. Lightly butter one side of each of the tortillas. Place the tortillas butter side down on a hot griddle or skillet to soften. After the tortilla is softened place on a work surface and add some filling and top with Montery Jack Cheese. Roll the enchilada and place in a 13 X 9 casserole dish that has been sprayed with cooking spray. Continue until all 12 enchiladas are in the casserole dish. Cover the enchiladas with the remaining Montery Jack Cheese and then top with the chili con queso. Place in a 375 degree oven and bake covered for about 25 minutes. Serve with spanish rice and refried beans.
