Serves 8

2/3 cup onion -- chopped
2/3 cup celery -- chopped
2/3 cup green bell pepper -- chopped
2 tablespoons olive oil
2 tablespoons butter
6 cups cornbread -- crumbled    Cornbread
3 cups biscuits (about 5) -- crumbled    Orville's Country Biscuits
1 tablespoon sage
salt and pepper -- to taste
2 eggs -- beaten
1 stick butter -- melted
2 cans chicken stock -- 3 /12 cups
1 1/2 cups milk

Ahead of time prepare the cornbread and biscuits. In a hot skillet add 2 tablespoons of olive oil and 2 tablespoons of butter. Add the onions, celery, and bell pepper and saute until tender. In a large mixing bowl add the cornbread and biscuit crumbs. Add the chicken stock and the cooked vegetables. Add the sage, salt and pepper to taste. Stir in the melted butter and the beaten eggs. Add the milk. Place the dressing in a 13" X 9" casserole dish that has been sprayed with cooking spray. Bake in a 350 degree oven for 1 hour (covered). Remove the cover and bake until it begins to brown on the top. About another 20 minutes.
