Serves 4 to 6

1/4 cup olive oil
7 chicken tenderloins
1 cup bell pepper -- chopped
1 cup onion -- chopped
1 tablespoon granulated garlic
1 tablespoon cumin
2 teaspoons chili powder
1 can Rotel tomatoes
1 can cream of chicken soup
2 cups chicken stock (broth)
1/4 cup Worcestershire sauce
1/2 cup sour cream
1 cup grated cheese (cheddar or Monterey Jack)
salt and pepper -- to taste
corn tortilla chips
1/4 cup jalapeno peppers (optional)

Take chicken tenderloins and cut into thin strips and then into bite size pieces. Add the olive oil, bell pepper, and onions to a sauce pan. Cook until tender. Add chicken and brown. After chicken has browned add 2 cups of chicken stock, 1 can of Rotel tomatoes, and the cream of chicken soup. Add the garlic, cumin, and chili powder. Mix well. Add the sour cream and grated cheese. Add salt and pepper to taste, but be light on the salt as the tortilla chips will have salt, so don't get carried away with salt. If you want it very spicey add the 1/4 cup of chopped jalapenos. When all ingredients are well mixed let it simmer over low heat for about 20 minutes to let all the flavors blend. When ready to serve just place tortilla chips in the bottom of a soup bowl and ladle the soup over them. This dish will make you want to slap your mamma, because she did not make it for you.
