Makes 5 to 6 dozen

2 sticks butter -- softened (1 cup)
1 cup sugar
1 cup brown sugar -- packed
2 eggs
2 teaspoons vanilla
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
2 teaspoons cinnamon
3 cups flour
2 cups carrots -- grated
3/4 cup raisins
3/4 cup dates -- chopped
1 cup pecans -- chopped

Cream butter, sugar, and eggs. Add vanilla, baking powder, baking soda, cinnamon, and salt. Mix well. Add carrots, pecans, dates, and raisins. Mix well. Add flour and mix until well blended. Drop onto a cookie sheet with a spoon or ice cream scoop. Use baking paper on cookie sheet if available. Bake at 350 degrees until lightly browned (about 10 minutes). Remove from oven and let cool until cookies are firm. Remove from cookie sheet and place on cooling racks to cool completely.
