Makes 3 short layers or 2 full size layers.

2 cups sugar
1 cup brown sugar (packed)
1 cup butter (2 sticks, softened)
4 eggs
2 teaspoons baking soda
2 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon salt
3 cups carrots -- grated
3 cups flour
2/3 cup oil
1/2 cup heavy cream
1 cup pecans -- chopped
1 cup raisins

Cream eggs,butter, and sugar in mixer. Add all dry ingredients except flour and mix until smooth. Add carrots and blend. Add flour and mix until smooth. Add raisins, pecans, cream, oil and mix until well blended. Pour batter into a 13" X 9" pan (1/4 sheet) or 2 9" round cake pans sprayed with cooking spray. If you desire a 3 layer cake use 3 9" pans. Bake at 350 degrees until cake tests done. Turn out on cooling rack. When completely cooled frost with a Cream Cheese Frosting.
