Serve over rice and top with shrimp

1/2 cup onions -- chopped
1/2 cup red bell pepper -- chopped
1/2 cup green bell pepper -- chopped
1/4 cup celery -- chopped
1/2 cup fresh tomato -- chopped
1 clove garlic -- minced
2 tablespoons butter
3 tablespoons olive oil
1 teaspoon cajun seasoning
1/2 teaspoon dill weed
1 tablespoon parsley
1 teaspoon cumin
1/4 cup flour
1 1/2 cups water
salt and pepper -- (to taste)
cayenne or red pepper -- (to taste)


Put the butter and olive oil in a skillet. When hot add the onion, red and green bell peppers, garlic, and the celery. When the onions are translucent, add 1 cup of water. In a small bowl mix 1/4 cup of flour in 1/2 cup of water. Put flour mixture in skillet, stirring until well mixed. Add the cajun seasoning, dill weed, cumin, red or cayenne pepper (if desired), salt and pepper (to taste). Add the remaining water (1/2 cup) and cook until vegetables are tender and sauce has thickened.

SHRIMP

12 shrimp -- raw
4 tablespoons butter
1 clove garlic -- minced
1/2 teaspoon cajun seasoning
salt and pepper -- (to taste)

Put 4 tablespoons of butter, garlic, cajun seasoning, salt and pepper (to taste) in a saute pan. Add the shrimp and cook until done (about 5 minutes).
