Serves 4

Roux

1/4 cup olive oil
1/4 cup flour
1/2 cup red onion -- chopped

Add the olive oil and flour to a hot skillet. Cook over medium high heat until flour has a light chocolate brown color. Add the onions and cook for about 5 minutes.

4 cups red potatoes -- cut in small chunks
1 1/2 teaspoons cajun seasoning
4 teaspoons parsley
1 teaspoon basil
salt and pepper -- to taste
1 1/2 cups water
3/4 cup milk
1/2 cup grated cheddar cheese

Add the water and all of the seasonings. Add the potatoes and cook covered for about 20 minutes. Now add the milk and the grated cheese and mix well. Place the skillet (uncovered) in a preheated 400 degree oven and cook for another 15 minutes or until the potatoes are done.
