Apple Raisin Bread

Makes 2 loaves

1 cup butter (2 sticks)-- softened
1 cup sugar
1 cup brown sugar -- packed
4 eggs
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons baking powder
2 teaspoons cinnamon
1/2 teaspoon cloves
1 teaspoon allspice
1 tablespoon vanilla
4 cups flour
1 cup raisins
4 cups apples -- (small pieces)
1 cup pecans -- chopped

Cream butter, sugar, and eggs. Add vanilla and rest of dry ingredients except the flour and mix well. Add flour mix until smooth. Add apples, raisins, and pecans and mix until well blended. Pour batter into 2 loaf pans that have been sprayed with cooking spray or lined with baking paper(preferred method). Bake in a 350 degree oven until centers test done. Remove from oven and let cool for a few minutes, then remove from pans and place on cooling racks to cool.
