Orville's "Apple Pie" Cheese Cake with Streusel Topping

Filling Good Eats Cheese Cake Class
24 ounces cream cheese (3-8 oz pkg) -- softened
3/4 cup brown sugar -- packed
3/4 cup sugar
3 eggs
3 tablespoons sweetened condensed milk -- Eagle Brand
2 teaspoons vanilla
1/4 teaspoon allspice
Crust
1 3/4 cups vanilla wafer cookie crumbs
3/4 stick butter (6 tablespoons)
1/4 cup brown sugar
1/2 teaspoon cinnamon
Apple Topping
1 can apple pie filling -- 21 oz can
1/4 cup sugar
1/4 cup brown sugar
1/4 teaspoon allspice
1/4 teaspoon cinnamon
Streusel Topping
1/2 cup brown sugar -- packed
1/2 cup flour
1/2 teaspoon cinnamon
4 tablespoons butter -- chilled
1/4 cup pecans -- finely chopped
Filling
Combine softened cream cheese, brown sugar, sugar, eggs, vanilla, allspice, and sweetened condensed milk in a mixing bowl. Use a hand mixer to completely blend all ingredients. Mix untill batter is nice and smooth. Use a 10 inch springform pan. Spray the pan with cooking spray. Prepare the crust and spread on the bottom of the pan and press in by hand. Pour filling into pan. Bake in a 375 degree oven for 30 to 40 minutes or until lightly browned and filling is set. Remove from oven and place on a cooling rack. Leave in pan. Pour the prepared apple topping over top of cheese cake. Sprinkle the streusel topping over the top of the apple topping. Return the pan back to the oven and bake for another 15 to 20 minutes. Remove from oven and place on a cooling rack and let cool completely.
Crust
Use a rolling pin and crush vanilla wafers to make 1 3/4 cups. Add the crushed vanilla wafers to a mixing bowl. Add 1/4 cup of brown sugar and 1/2 teaspoon of cinnamon. Melt the butter and pour over the crushed vanilla wafers. Mix until all of the crumbs are coated with butter.
Apple Topping
Add the apple pie filling to a mixing bowl. Add 1/4 cup brown sugar, 1/4 cup sugar, 1/4 teaspoon cinnamon, and 1/4 allspice. Finely chop the apple slices in the filling.
Streusel Topping
In a mixing bowl combine sugar, flour, and cinnamon. Add butter and use a pastry cutter to cut in the butter into the mixture. Mixture should have a course meal texture when finished.
